Scanning Effect that gives hard-edges on text in color

Hello,

 

I am trying to get an effect that makes text hard-edged, almost like a black and white scan, on color scans.

 

I did color scans on our xerox machine a year ago at what I thought was default settings with 150 dpi.  These scans had small file sizes and very hard-edged, clear text.  Now I am doing the same thing and I am getting soft-edged, fuzzy text. 

 

I have attached images to show what I am currently getting and what I am trying to achieve.

 

The left side is my current scan, and the right side is what I got a year ago.  I want my current scans to look like the right side:

You can see that the text on the right side has a very hard edge, there are no gray pixels around the edges of the text.  The text on the left side is fuzzy, soft edged, and has pixels in shades of gray around the edges of the text if you zoom in.  

 

Essentially, the text on the right looks like it comes from a black and white scan, but clearly it was picking up the colored background.  It just treated text as if it was black and white.

 

Here's another example from my scans last year that shows the effect I want to get for my current scans.  If you look at the work "Luke" you can see that the K and E look hard-edged almost like they were re-drawn digitally, but the L and U are fuzzy edged.  Similarly, on the handwritten "Finn" all of the letters have that re-drawn, or hard-edged, look except for the dot on the i does not.

I want the scanner to do this re-drawn, hard edged look where it can, as it did in the scan above.  My current scans do not attempt to create hard edges on text like the one above.  They leave all text soft-edged like the LU and the dot of the i.  

 

Does anyone know what setting I can use to do a colored scan that creates hard edges on text like the images show?
