Protocol is SMB to the IP of the server and port is set to default (139).
Change that to 445, 139 is SMB via Netbios over TCP/IP, which pretty much died with the dawn of SMB2
I have also setup a shared folder with the share name of Scans and set the file path as the server name
Get rid of the path entirely, it is redundant, you already accessed the server via IP address, it connects in order, so the way you have it, it will go to the IP, go to the folder (Shared Name), and then try to access the host name, it will fail because it is impossible. File path will only be used for subfolders within the share.
set the folder to read/write and configured an AD user specifically for scan authentication with folder read/write privileges.
Windows 8 and up can be pretty specific, I stopped troubleshooting login issues a long time ago and just go to the source to get proper formatting. To do so, just add the login to the permissions portion, and when it shows the user, type it exactly how it appears in the brackets.

That method of formatting the username works in 100% of Xerox devices.
Sadly, I don't have access to the latest firmware for the Versant line, I just know the latest version number is 80.32.44, so if you need an update, you will likely need to call Xerox to get it.
