Scan to network folder - How to scan to a single folder?

Hi, I've set up network scanning on a Xerox WorkCentre 5225 

All is working fine except one thing.  My problem is I want to have a single network folder and multiple scans to it but without it creating a folder each time it scans .

How can I prevent it from doing this??
